I’m not even sure where I first tried this concoction. Fans of weird eats can get a peanut butter, bacon and banana toasted sandwich called The Elvis which (surprise, surprise) is available in restaurants in the States. Bacon has always been a comfort weekend breakfast in Blighty adding cheese and banana is just the next stage in the bacon buttie evolution.
The banana balances the saltiness of the bacon while the melted cheddar holds them all together and gives an extra mature tang that works oh-so-well between either soft white or toasted granary. I prefer soft white. It doesn’t matter what kind of bacon you use, streaky or back bacon. I thought that back bacon worked pretty well as it is a little meatier than streaky.
It couldn’t be simpler, just grill your bacon, toast your bread then put the bacon on the toast with sliced banana and sliced cheddar on top then under the grill for a couple of minutes or until the cheese is bubbling away. Et voilà.
A great addition to this hangover cure would either be honey or even better, maple syrup which loves bacon. Go on, show us your buttie!!
