The biggest day of the year for Christ Church Spitalfields – the Christmas choir service. The choir sings carols and hymns all afternoon then have an evening service and drinks afterward. During the afternoon they stop for lunch, usually a bit of quiche, some cold drumsticks and crisps…not this year! This is a really simple recipe to make a wonderfully fragrant and tasty roast chicken. The herbs I have suggested below can be altered, whether you use thyme, rosemary, sage, basil or tarragon – they all work lovely with a roast chicken.
Every time I baked this carrot cake for someone, they never fail to ask for the recipe!
