Great recipe, works really well!

I cooked it in two cake tins in order to sandwich the cake rather than cook in one big tin and then cut it in half afterwards. I cooked them for 50-55mins still at 180deg and they were cooked perfectly.

I also added in an extra teaspoon of cinnamon, 20g of extra walnuts and a handful of raisins as well.

That’s great! We try out all sorts of recipes and only put the good ones on. You should try the hummingbird choc cookies, now they are realllllly indulgent!

I made this cake 2 weeks ago, added pecan nuts to the recipe cos I love nuts and used brown sugar instead of caster sugar. And my husband couldn’t resist having a slice after dinner. Was meant to last a couple weeks, but lasted only one week. A friend of ours stopped by and tried a slice, My oh my, she has been disturbing me to make her on. Its the best carrot cake recipe ever. keep up the good work.

Banh Mi love them but I have to say it does,nt matter how much you eat you always find room for a little bit more.Vietnam the land of food and more food…..love it
